Pasta Dough

3 cups All-Purpose Flour
2 Tsp Salt
3 Eggs
2 Tbsp Olive or Vegetable Oil
¼ cup Lukewarm Water


➔Sift flour and salt onto a large wooden board; make a well in center. Add eggs, oil, and water. Work liquids into flour with fingers to make a stiff dough (or make dough in a large bowl, but it’s not as much fun). Knead dough on board (do not add additional flour) 10 minutes, or until dough is smooth and soft. Wrap dough in plastic wrap. Let stand 20 minutes. Cut into quarters. Keep dough you are not working with wrapped, or it will dry out. Roll out dough quarter on wooden board to an 8x8 inch square. (Do not use additional flour, but if dough sticks, sprinkle board lightly with cornstarch.) This takes a lot of pressure. Repeat with remaining dough. Cut dough into 4x4 inch squares and lay in a single layer on clean towels to dray for 1 hour; repeat with remaining dough.
